These apple pancakes with Greek yogurt are the perfect breakfast to do on a weekend. You really need the time to appreciate and relish every single bite of these thick and fluffy goodies. They are sugar-free, gluten-free and packed with protein thanks to the Greek yogurt.
Yes, pancakes (again)! Get used to it, because I have quite a few recipes. These pancakes have just the perfect texture and flavor. The combination of apple, Greek yogurt and cinnamon gives them enough taste and sweetness so that you don’t have to add any additional sugar or sweetener. They’re healthy, nutritious and filling. And the best part: they’re so easy to make!, using ingredients that you’ll probably already have in your kitchen.
If you’re able to resist eating them all, they can be stored in the fridge and reheated in the microwave whenever you want to eat them.
How to make these apple pancakes with Greek yogurt
Notes:
- Make sure that the pan is preheated before you pour in the mixture. It may take 1 min or 2 depending on the stove. You know it’s ready when you touch it and burn your fingertip (joking …. Mostly). Otherwise, the pancakes won’t get that brownish color and probably won’t be completely cooked inside.
- Make sure to cook the apple before you add it to the mixture. It doesn’t have to be completely cooked. When the apples chunks are soft, then they’re ready to use.
- If you don’t have a microwave (first of all, why on earth do you not have a microwave?), no problem. Cut the apple and boil it for 5 minutes.
Ingredients:
- 1 egg
- 1/3 cup of rolled oats
- 1 apple
- 2 tbsp of yogurt
- 1 tbsp of flax seeds
- Cinnamon
Toppings:
- Mango dices
- 10 gr of melted dark chocolate 85% cocoa
- 1 tbsp of peanut butter
Instructions:
- Cut the apple in pieces and put them on a plate. Heat them in the microwave at maximum power for 2 minutes
- Add all the ingredients (included the apple) in a blender and blend till smooth.
- Preheat a pan over medium heat and add a teaspoon of coconut oil
- Pour 1/4 portions of the batter into the pan and cover with a lid
- After 2 or 3 min (or when little bubbles start forming over the top), flip them over
- Let them cook for another 1 or 2 minutes without covering them
- Repeat with the rest of the batter
Now it’s time to put them on a plate and decorate with toppings. I used 1/4 of a diced mango, 10 gr of melted chocolate 80% cacao and 1 tablespoon of peanut butter.
Tips on how to melt the chocolate: the easiest way is the microwave. Place the chocolate in a bowl and heat at medium power for 1 minute and then in intervals of 30 seconds. Every time you take it our, stir the chocolate and put it back in the microwave. Another option is over a bain marie. To melt chocolate in a bain marie, you only need a pot and a heatproof bowl. Cover the bottom of a pot with water, but not more than half its capacity, and place the bowl on top. It is important that this bowl does not touch the bottom of the pot. Then, heat it over low power so that the water takes temperature gradually. Stir the chocolate till its completely melted.
