Oatmeal crepes with homemade blueberry jam

These mouth-watering, nutritious and filling crepes will make you start your day in a great mood. They’re super easy to make and you only need a few ingredientes. It doesn’t require any extra tools besides a whisk and a bowl to blend all the ingredients together.

I grew up eating crepes. Back in Romania my father would prepare them for my siblings and I, and we would eat them with homemade red fruits jam. In Romania they’re served them as a roll. Of course, it was not the healthiest version. They’re made with diary milk and butter. Adding the homemade jam (which was almost half fruit and half sugar) just made it a sugar bomb. But it was so delicious! Every time I eat them, I go right back to my childhood.

Anyway, 20 years later I’m doing the same recipe but with a way healthier twist, replacing the diary milk with oat milk and the white flour with oat flour. The healthy blueberry jelly is the easiest thing to do and you’ll see in just a couple of minutes.

Before we start with the recipe, let me give you a few previous tips:

  • Use a Nonstick pan and add just a few drops of coconut oil.
  • Make sure that the pan is preheated before you pour in the batter. Depending on the stove, you should leave it 2 or 3 minutes till it’s at the right temperature.
  • Don’t cover the pan. The crepes batter is thinner than the one for pancakes. It doesn’t need any extra heat.
  • For the blueberry jelly, if you don’t have a stevia powder, you can either add a teaspoon of coconut sugar, honey, or leave it as it is. The blueberries already have a great taste and sweetness without any addition.
  • If you don’t have oat flour, just put the rolled oats on either a food processor or a coffee grinder, and blend.

So without further ado, let’s get right into the recipe:

Ingredientes (1 serving):

  • 1 egg
  • 1/3 cup of oat flour
  • 1/4 cup of oat milk

Topping:

  • 1/4 cup of blueberries
  • Stevia powder (for the blueberries)
  • 10-12 toasted almonds
  • 1 tbsp of shredded coconut
  • 1/2 banana

Instructions:

  1. In a bowl, add the egg, oat flour and oat milk and mix with a whisk.
  2. Preheat a pan over medium-high heat and add a tsp of coconut oil.
  3. Wait until the pan is hot and add 1/4 to 1/2 of batter.
  4. Wait 3 or 4 minutes (depending on the stove) or till little bubbles start forming over the top. Flip it over.
  5. Wait 1 or 2 minutes more.
  6. Repeat with the rest of the batter.
  7. While you’re waiting for the crepes to be done, grab a small bowl and place the blueberries with a tbsp of water and a little bit of stevia powder (stevia is a potent sweetener so don’t add too much of it). Cover it and place it in the microwave at maximum power for 3 minutes. Remove the bowl and mix it all together. Put it back for 1 minute and a half more. After that, remove the blueberries from the microwave and mash them with a fork (or whatever tool you prefer).

Another option is putting them in a pot, add the water and stevia and stirr till the blueberries are cooked. After that, mash them and remove till you have a jelly consistency.

Done! Now place the crepes on a plate and decorate with almonds, shredded coconut, banana and the blueberry jam.
