This healthy cinnamon apple cake is the perfect moist and fluffy breakfast. It offers a nutritious and balanced meal loved even by the healthy desserts skeptics. The sweetness from the apples and dates combined with cinnamon are an irresistibly delicious combo.

This recipe could not be easier to make. With just a few ingredientes you get a perfectly spongy and moist cake. It doesn’t require any extra tool and it’s made with ingredients that you’ll probably already have in your kitchen, no fancy ingredientes needed.

This healthy cinnamon apple cake is low sugar, gluten free and lactose free. It’s a healthy and filling breakfast that you can also prepare in advance for your busy weekdays. Although the scent that wafts through your whole house while they’re baking will not make it easy to resist the temptation of eating them all. Its soft inside and crunchy outside will make it even harder.

Tips for this recipe:

  • If you want some extra sweeteness or just don’t want to use dates, you could use stevia powder. Don’t use too much as stevia is a very potent sweetener.
  • I’m using oat milk for this recipe, but you can use any other plant milk.

Healthy cinnamon apple cake recipe:

As I mentioned before, this recipe is a piece of cake 😀 all you have to do is mix all the ingredients in a heatproof bowl, throw it in the oven and wait for it to reach perfection.

Ingredients (2 servings)

  • 2 eggs
  • 1/4 cup of coconut oil
  • 2/3 cup of plant milk
  • 4 dates
  • 1 1/2 cups of oat flour
  • 1/3 cup of almond flour
  • 1 tsp of baking powder
  • 1 tsp of cinnamon

Instructions:

  • Place the dates in hot water for at least 1 hour before using them.
  • Put them into a food processor and mix until you get a smooth paste.
  • In a bowl, add the eggs and mix them with a whisk.
  • Add the date paste, coconut oil and plant milk and mix it all together.
  • Sift the almond and oat flour and add them to the bowl with the baking powder.
  • Mix it all together and add the cinnamon.
  • Grab 2 heaproof bowls or molds and add half of the batter in each one.
  • Slice the apple and cover the batter with the slices.
  • Add the rest of the batter on top of the apple slices.
  • Add again apple slices on top.
  • Preheat the oven at max temperature for 5 min. Then set it at 180º.
  • Place the bowls in the oven and bake for 30 to 35 minutes (depending on the oven). A handy tip to know whether it’s cooked inside is using a toothpick.  If you insert it near the center, and it’s free of batter, then they’re done. Otherwise, they will need more time.
  • Done! Time to enjoy this healthy cinnamon apple cake.
