Peanut butter vegan bonbons

These peanut butter vegan bonbons are the result of my two favorite ingredients in the whole universe (not dramatic at all): peanuts and chocolate. It’s low sugar, vegan, gluten-free and absolutely delicious. They are easy to make, and you only need 3 ingredients and a food processor.

You won’t believe how easy these vegan bonbons are to make. They have the perfect combination of sweetness and flavour. The secret (not so secret) are the dates; they give the perfect amount of sweetness to the bonbons, not needing any added sugar. Adding the chocolate and peanut just turns this recipe into a completely perfect creation (again, not dramatic at all). It takes a bit of time to make them but believe me, it’s totally worth it!

How to make these peanut butter vegan bonbons

Notes:

  • Place the dates in hot water and let them soak for 1 or 2 hours. You’ll need them to be as soft as possible to get a smooth filling for the bonbons.
  • Try to use a food processor. The normal blenders are not made for solid foods. Otherwise, you’ll struggle to get a smooth texture for the filling. Although it’s possible, and if there are some still some date chunks that remain, no problemo! It will only give the bonbon filling a bit more of texture.
  • Make sure to freeze the filling for 30 min. Do not skip this step! I’m watching you. You need a compact texture so that it does not fall apart when you dip it in melted chocolate.
  • Melt the chocolate either in the microwave or over a Bain Marie. Either of the two options will make sure you don’t burn the chocolate (if you do it the way I tell you at the end of this post). Don’t make up any strange technique to melt the chocolate, it’ll probably get burnt (I’m looking at you, Andrea from the past).

Ingredients:

  • 175 grams of dates
  • 1/4 cup of peanut butter
  • 90 grams of chocolate 85% cocoa

Topping:

  • 20 grams of ground nuts (I used cashews for this recipe, but any type of nut will do)

Instructions:

  1. Place the dates in a bowl filled with hot water and let them soak for 1 or 2 hours
  2. Remove the dates and place them in a food processor
  3. Add the peanut butter
  4. Mix
  5. Once you get a smooth texture, make 1 tbsp portions and put them on a plate
  6. Place it in the freezer for 30 minutes
  7. Take the fillings you placed before and give them a bonbon shape with your hands. Put them back into the freezer
  8. Melt the chocolate in a heatproof bowl
  9. Take the bonbon fillings out of the freezer and dip them one by one in the melted chocolate.
  10. Place them on a clean plate with plastic film on top (on top of the plate, not the bonbons :D) This will make it easier to grab the bonbons afterwards. Without the film, they will stick to the plate
  11. Place them in the fridge and wait for at least 30 minutes before you eat them (I know, the waiting part is pure torture)

How to melt the chocolate:

The easiest way is the microwave. Place the chocolate in a bowl and heat at medium power for 1 minute and then in intervals of 30 seconds. Every time you take it out, stir the chocolate and put it back in the microwave. Another option is melting it over a Bain Marie. For this, you only need a pot and a heatproof bowl. Cover the bottom of a pot with water, but not more than half its capacity, and place the bowl on top. It is important that this bowl does not touch the bottom of the pot. Then, heat it over low power so that the water takes temperature gradually. Stir the chocolate till it’s completely melted.

Done! Now it’s time to enjoy them.

Please note that although these bonbons are healthier than the normal ones, they still have a high amount of calories. Don’t eat them all at once 🙂 save some for later. Usually I eat 1 or 2 with my coffee. They can stay in the fridge for as long as you resist the temptation, so don’t worry.
