Vegan chocolate coconut bites

If you love the combination of coconut and chocolate as much as I do, you won’t be able to stop eating these vegan chocolate coconut bites. After trying (and failing) to get this recipe with the perfect flavour and texture, I made it! They’re healthy, vegan, low sugar, gluten-free and absolutely delicious.

These chocolate coconut bites are perfect for a snack or a sweet to accompany your coffee. I personally love to have a chocolate snack while drinking my coffee, and these are just perfect for that.

Inspired by the bounty chocolate bars (one of my favourite sweets of all times), these chocolate coconut balls are a delicious and healthy option for those who love chocolate. You can prepare them for someone special, for your kids or just for yourself. Anyone will love them, I can assure you.

Now that I told you (several times) how delicious they are, let’s get right into my tips and tricks to get the most out of this recipe:

  • Place the dates in hot water and let them soak for 1 or 2 hours. They have to be as soft as possible in order to get a smooth filling.
  • Try to use a food processor. The normal blenders are not made for solid foods. Otherwise you’ll struggle getting a smooth texture for the filling.
  • Make sure to freeze the filling for 30 min. You need a compact texture so that it doesn’t fall apart when you dip it in hot chocolate.
  • Melt the chocolate in the microwave or over a bain marie. Either of the two options will make sure you don’t burn the chocolate. Don’t make up any strange method to melt the chocolate, it will probably get burnt (believe me, I’ve been there). At the end of the post I’ll leave you some more tips on how exactly you should melt the chocolate.

That being said, let’s start with the recipe:

Ingredients (12 chocolate coconut bites):

  • 2/3 cups of shredded coconut
  • 175 gr of pitted dates
  • 2 tbsp of coconut flour
  • 2 tbsp of coconut oil
  • 50 gr of chocolate 85% cocoa
  • 125 ml of coconut milk

Instructions:

  1. Place the dates in a bowl filled with hot water and let them soak for 1 or 2 hours
  2. Remove the dates, put them into a food processor and mix.
  3. Once you get a smooth cream, place it into a bowl and add the shredded coconut, the coconut flour and the coconut oil.
  4. Mix all the ingredients together and form 1 tbsp portion balls.
  5. Place them in the freezer for 30 minutes.
  6. In the meantime, Melt the chocolate together with the coconut milk till you get a smooth chocolate sauce.
  7. Remove the balls from the freezer and dip them one by one in the chocolate. Place them on a plate with plastic film so that they don’t get stick to the plate.
  8. Add some more shredded coconut on top of them.
  9. Place them in the fridge for at least 30-40 minutes more. It’s the hardest step of all: the waiting.

After the 30-40 minutes in the fridge, they’re ready to enjoy.

Now, just a few other tips on how to melt the chocolate:

The easiest way is the microwave. Place the chocolate in a bowl and heat at medium power for 1 minute and then in intervals of 30 seconds. Every time you take it our, stir the chocolate and put it back in the microwave. Another option is over a bain marie. To melt chocolate in a bain marie, you only need a pot and a heatproof bowl. Cover the bottom of a pot with water and place the bowl on top of it. It’s important that the bowl doesn’t touch the bottom of the pot. Then, heat it over low power so that the water takes temperature gradually. Stir the chocolate till its completely melted.

Please note that although these are a healthier version than the regular bounty chocolate bars, they still have a high amount of calories. Don’t eat them all at once 🙂 and save some for later. I usually eat 1 or 2 (or 3 or 4 but that’s a secret) at a time.
