Have you ever lived that awkward moment when you buy something that you have no idea what to do with? Plantain was one of those moments for me. Luckily, if this happens to you (because it’s obviously a common and recurrent issue), I have the solution. It’s healthy, quick and tasty. In addition to all, it’s also vegan and gluten-free.
How to make these healthy air fryer plantain chips with guacamole
These air fryer plantain chips are mildly sweet, the more yellow the plantain, the sweeter the chips will be.
Ingredients (2 servings)
- 2 plantains
- Olive oil spray
🥑 Guacamole: 🥑
- 2 medium-sized avocados
- ½ lime
- 3 or 4 stems of fresh coriander
- ½ onion
- 1 tomato
- ½ tsp of paprika
- ½ tsp of cumin powder
- Salt and pepper
Instructions:
- Peel and cut the plantains into thin slices
- Place them in the air fryer, spray some olive oil and bake for 15 minutes at 200ºC. A tip is to pre-heat the air fryer for a couple of minutes before placing the plantain slices for a better texture
- Add the avocado pieces to a bowl and mash them with a fork
- Chop the onion and tomato and add them to the bowl
- Add the lime juice and the paprika, cumin powder and salt and pepper
- Separate the coriander leaves from its stems, chop them and add them to the bowl. Mix it all together

- 2 avocados
- 1/2 lime
- 4 stems of fresh coriander
- 1/2 onion
- 1 tomato
- 1/2 tsp paprika
- 1/2 tsp cumin powder
- Salt and pepper
Instructions
