Air fryer plantain chips with guacamole

These air fryer plantain chips with guacamole are a great vegan and healthy snack. They’re easy and quick to make, low calorie, and absolutely delicious!

Ingredients
  

  • 1 plantains
  • 1 tbsp olive oil

Guacamole

  • 2 avocados
  • 1/2 lime
  • 4 stems of fresh coriander
  • 1/2 onion
  • 1 tomato
  • 1/2 tsp paprika
  • 1/2 tsp cumin powder
  • Salt and pepper

Instructions
 

  • Peel and cut the plantains into thin slices
  • Place them in the air fryer, spray some olive oil and bake for 15 minutes at 200ºC. A tip is to pre-heat the air fryer for a couple of minutes before placing the plantain slices for a better texture
  • Add the avocado pieces to a bowl and mash them with a fork
  • Chop the onion and tomato and add them to the bowl
  • Add the lime juice and the paprika, cumin powder and salt and pepper
  • Separate the coriander leaves from its stems, chop them and add them to the bowl. Mix it all together
