Healthy creamy chicken pasta

This healthy creamy pasta is the perfect dish for a lazy day. It’s a nutritious meal with a balanced amount of carbs, protein and vegetables. It doesn’t take much effort, and it’s absolutely delicious!

I don’t even remember when I started doing this recipe. But it’s been my comfort healthy food for many years. The flavor of the chicken and zucchini combined with the creaminess of the oat cream are just heaven on earth (not dramatic at all). Zucchini is one of my favorite veggies. It’s so versatile and tasty; and the chicken … who doesn’t love chicken? Adding the oat cream just turns this combination into a perfect lunch or dinner, almost without effort. It’s a no-brainer!

Notes:

  • Use a chicken leg instead of chicken breast. I personally prefer the meat of the chicken leg. It has much more taste and texture. Just remove the skin and the bones and cut it into little chunks.
  • Use whole grain pasta, it’s packed with nutrients and fiber. Nowadays, you can find whole wheat pasta in almost every supermarket. Please be aware that some of them are called “whole wheat pasta” but they use white flour and just add fiber on it. The real whole wheat pasta will only have as ingredient “whole durum wheat”.
  • Don’t overcook the pasta. Just don’t do it (I’m watching you). To simplify, I cook the pasta in a separate pot for 8 or 10 minutes (depending on the instructions on the package) and add it to the sauce the last 2 minutes so that the pasta continues to cook inside the sauce while all the flavors come together.
  • It’s important to follow the order and steps of my instructions. Every ingredient needs its own time of cooking, so throwing all them at the same time to a pan won’t work.

Ingredients:

  • 60 grams of whole wheat pasta
  • 1 chicken leg
  • 1 medium zucchini
  • 1/3 of a medium-sized onion
  • 175 ml of oat cream
  • Paprika, salt and pepper

Instructions:

  1. Debone the chicken leg and chop it into little chunks
  2. Pre-heat a pan over medium heat and stir in a tsp of olive oil
  3. Dice the onion and toss it into the pan
  4. Add the chicken chunks
  5. Cook for 10 minutes
  6. In the meantime, slice the zucchini and add it when the 10 minutes have passed
  7. Bring a pot of salted water to boil and cook the pasta for a couple of minutes less than the package instructions (remember, they will be cooked for 2 minutes more together with the sauce).
  8. Back to the pan, wait 5 minutes after you added the zucchini and pour the oat cream. Add the paprika, salt and pepper and cook for 5 minutes
  9. After the 5 minutes have passed, add the pasta and let it cook for another 2 minutes

Done! Time to put it on a plate and enjoy!
