Apple cinnamon oatmeal cookies

- 1 cup of rolled oats
- 3 tbsp of honey
- 1 tbsp of cinnamon
- 1/3 cup of almond flour
- 2 cups of oat flour
- 1/4 cup of peanut butter
- 1 apple
- 1/2 cup of walnuts
- 2 eggs
- 2 tbsp of vanilla extract
Dice the apple and put it in a mixer together with the eggs. Mix until smooth.
Pour the mixture into a bowl and add the vanilla.
Sift the almond flour, oat flour and cinnamon and mix it all together.
Add the honey and peanut butter and mix.
Add the rolled oats.
Chop the walnuts with a knife and add them to the bowl.
Mix it all together till you get a smooth non-sticky dough.
Take 1/4 cup portions of the dough and form cookies.
Preheat the oven at max temperature and set it at 180º (356ºF) for 22-23 minutes. You can also use an air fryer, in that case bake for 20 minutes at 160ºC
