I know, this recipe gives you autumn vibes while we’re in summer. Why? I live in the Netherlands, I haven’t seen the sun in a week so bear with me. These cookies are delicious and can be eaten at any time. Perfect to enjoy with a coffee or a cup of tea on a rainy afternoon while you read a book, or look out the window and wonder: how come these cookies are so delicious if they don’t have any added sugar?

How to make healthy apple cinnamon oatmeal cookies

Ingredients (20 cookies):

  • 1 cup of rolled oats
  • 3 tbsp of honey
  • 1 tbsp of cinnamon
  • 1/3 cup of almond flour
  • 2 cups of oat flour
  • 1/4 cup of peanut butter
  • 1 apple
  • 1/2 cup of walnuts
  • 2 eggs
  • 2 tsp of vanilla essence

Instructions:

Tip 1: you can bake the apple in advance, it will give more flavour to the recipe. Otherwise, you can also use a raw apple.

Tip 2: I only use 3 tbsp of honey. I think the honey, cinnamon and vanilla already give enough sweetness and flavour to the recipe, but if you want some extra sweetness you can either add more honey or stevia powder.

  • Dice the apple and put it in a mixer together with the eggs. Mix until smooth.
  • Pour the mixture into a bowl and add the vanilla.

  • Sift the almond flour, oat flour and cinnamon and mix it all together.

  • Add the honey and peanut butter and mix.
  • Add the rolled oats.
  • Chop the walnuts with a knife and add them to the bowl.

  • Mix it all together till you get a smooth non-sticky dough.

  • Take 1/4 cup portions of the dough and form cookies.

  • Preheat the oven at max temperature and set it at 180º (356ºF) for 22-23 minutes. You can also use an air fryer, in that case bake for 20 minutes at 160ºC
  • Done! Once they’ve cooled down, they’re ready to be served.

These cookies taste better once they’ve cooled down, so I recommend waiting a little bit before you eat them. They can be easily stored in an airtight container at room temperature and can last for 3 or 4 days.
