Pumpkin spice granola
This pumpkin spice granola is a crunchy, low sugar, gluten-free and full of flavor breakfast or snack, perfect for autumn, and making it couldn't be easier. With 8 ingredients, the classic pumpkin spice mixture and a few steps, you'll get a perfectly crispy and delicious granola.

- 1 cup of rolled oats
- 1/3 cup of pumpkin seeds
- 1/8 cup of coconut oil
- 1/4 cup of almonds
- 1/2 cup of pecan nuts
- 1/4 cup of pumpkin purée
- 2 tbsp of honey or maple syrup
- 1 tsp of vanilla extract
Spices
- 1/2 tbsp of cinnamon
- 1/4 tbsp of nutmeg, ginger powder and cloves
In a bowl, mix the rolled oats with the spices and pumpkin seeds
Chop the pecan nuts and almonds and add them to the bowl
In a smaller bowl, mix the coconut oil, vanilla extract, pumpkin puree and maple syrup (or honey) and mix it all together
Add it to the bowl and mix it all together.
Preheat the oven for 5 minutes at maximum temperature
Spread the mixture over a baking sheet, place it in the oven and bake for 40 minutes at 180ºC (356ºF) or until the mixture is golden.
Make sure to stir the mixture every 10 or 15 minutes
