Pumpkin spice granola

This pumpkin spice granola is a crunchy, low sugar, gluten-free and full of flavor breakfast or snack, perfect for autumn, and making it couldn't be easier. With 8 ingredients, the classic pumpkin spice mixture and a few steps, you'll get a perfectly crispy and delicious granola.

Ingredients
  

  • 1 cup of rolled oats
  • 1/3 cup of pumpkin seeds
  • 1/8 cup of coconut oil
  • 1/4 cup of almonds
  • 1/2 cup of pecan nuts
  • 1/4 cup of pumpkin purée
  • 2 tbsp of honey or maple syrup
  • 1 tsp of vanilla extract

Spices

  • 1/2 tbsp of cinnamon
  • 1/4 tbsp of nutmeg, ginger powder and cloves

Instructions
 

  • In a bowl, mix the rolled oats with the spices and pumpkin seeds
  • Chop the pecan nuts and almonds and add them to the bowl
  • In a smaller bowl, mix the coconut oil, vanilla extract, pumpkin puree and maple syrup (or honey) and mix it all together
  • Add it to the bowl and mix it all together.
  • Preheat the oven for 5 minutes at maximum temperature
  • Spread the mixture over a baking sheet, place it in the oven and bake for 40 minutes at 180ºC (356ºF) or until the mixture is golden.
  • Make sure to stir the mixture every 10 or 15 minutes
