Autumn season has begun. It’s time to sit back, put your cozy pajama on and have a warm tea while you observe the colorful and stunning spectacle of the leaves falling from the trees. Having lived in the south-east of Spain for the last 15 years, it’s been a while since I haven’t experienced a real autumn and this year I’m so excited I get to live it, in Amsterdam. The weather and the scenic fall foliage inspired me to get the oven running and start baking.

This granola has it all. It’s easy to make, it doesn’t require many ingredients, and it’s a healthy and flavorsome breakfast that you can combine with your favorite yogurt or milk. I kept it as simple as possible, using just a few basic ingredients that make it have a delicious flavor, but you can add dried fruits, more types of nuts or dried coconut. You can use either pumpkin or butternut squash. I personally recommend butternut squash due to its nutty and mildly sweet flavor. For a vegan version you can use maple syrup instead of honey.

Note: you can directly buy the pumpkin purée or make it yourself. You only have to peel and dice the pumpkin, boil it for 20 minutes, mash it with a fork and voilà, you have pumpkin purée.

How to make pumpkin spice granola

Ingredients (4-5 servings):

  • 1 cup of rolled oats
  • 1/3 cup of pumpkin seeds
  • 1/8 cup of coconut oil
  • ¼ cup of almonds
  • ½ cup of pecan nuts
  • ¼ cup of pumpkin purée
  • 2 tbsp of honey or maple syrup
  • 1 tsp of vanilla extract
  • Spices: ½ tbsp of cinnamon, ¼ tbsp of nutmeg, ginger powder and cloves

Instructions:

  • In a bowl, mix the rolled oats with the spices and pumpkin seeds

  • In a smaller bowl, mix the coconut oil, vanilla extract, pumpkin purée and maple syrup (or honey) and mix it all together

  • Add it to the bowl and mix it all together.

  • Preheat the oven for 5 minutes at maximum temperature
  • Spread the mixture over a baking sheet, place it in the oven and bake for 40 minutes at 180ºC (356ºF) or until the mixture is golden.
  • Make sure to stir the mixture every 10 or 15 minutes

Done! Enjoy this pumpkin spice granola full of flavor. You can serve it with yogurt or milk. I used almond yogurt and it was delicious!
