Vegan oatmeal banana pancakes

Start your day with these fluffy vegan oatmeal banana pancakes. They’re gluten-free, sugar-free, lactose free and super yummy! The best part is that it doesn’t take more than 15 minutes to make them, and you don’t need any additional tools besides a bowl and a whisk to mix all the ingredients.

Pancakes have been part of my mornings for quite a while. I love them! It’s a nutritious and complete breakfast for the whole family. They’re so easy and quick to make. Perfect for a weekend brunch, these pancakes have a balanced combination of carbs, healthy fats and protein. You can also prepare them on the weekend and store them in the fridge for week days. They can be easily re-heated in the microwave.

Now that I made it clear how much I love these pancakes, let’s start with some previous tips:

  • Use a ripe banana. The riper the banana, the sweeter the pancakes will be.
  • Make sure that the pan is preheated before you pour in the mixture. It may take 1 or 2 min depending on the stove. Otherwise, the pancakes won’t get that brown-ish color and probably won’t be completely cooked inside.
  • Cover the pan after you pour in the batter portions and uncover it after you turned them over. This will give them a thick and fluffy texture.
  • If you don’t have oat flour, no problemo! Grab the rolled oats and put them into a food processor or a coffee grinder and grind.

Great! Now let’s move on to the next step: the recipe.

  • Ingredients:
  • 1 ripe banana
  • 1/3 cup of oat flour
  • 1 tbsp of coconut flour
  • 1/3 cup of plant milk
  • 1 tbsp of ground flax seeds
  • Cinnamon

Topping:

  • 1 tbsp of peanut butter
  • A handful of blueberries

Instructions:

  1. Add all the ingredients to a bowl (save a piece of banana for the topping).
  2. Mix with a whisk until smooth
  3. Heat the pan over medium heat.
  4. Add a tsp of coconut oil
  5. Pour 1/4 portions of the batter into the pan. Cover the pan.
  6. After 2 or 3 min (or when little bubbles start forming over the top), flip them over.
  7. Wait another 1 or 2 minutes.
  8. Repeat with the rest of the batter.
  9. Done! Place them on a plate and decorate with the toppings.
