Vegan chocolate bars with cashews

These vegan chocolate bars are low sugar (sugar free if you use sugar free chocolate), gluten free, low carb and a piece of pure happiness on your tongue. They’re very easy to make and the process doesn’t require any special skill, everyone can make them 🙂 The combination of toasted cashews with chocolate and the coconut essence makes these chocolate bars into the perfect vegan healthy dessert.

I’m a big fan of these chocolate bars, and not only because I made them :D. They’re the result of intense chocolate cravings and me trying to keep it healthy. I didn’t fail this time :). Although they still have a high amount of calories, they’re low sugar and packed with nutritious ingredients. They will satisfy your chocolate cravings and the best thing is that they can be eaten at any time of the day. They are low carb and therefore keto friendly.

If you want a totally sugar free version, use sugar free dark chocolate. I personally prefer to use the normal one with 85% cocoa, as artificial sweeteners can alter your gut microbiota. The chocolate that I use only has 12 grams of sugar per each 100 grams of chocolate, so this recipe has a total of 12 grams of sugar, which means that each piece has 1.33 grams.

Ingredients (9 chocolate bars):

  • 1/4 cup of coconut oil
  • 1/2 cup of almond flour or ground almonds
  • 100 gr of dark chocolate 85% cacao
  • 1/2 cup of coconut milk
  • 1/2 cup of toasted cashews

Instructions:

  • Place the chocolate in a heatproof bowl and melt it over a bain marie or in the microwave (instructions at the end of the recipe)
  • Add the coconut oil and mix.
  • Add the coconut milk and mix.

  • Place the mixture in a bigger bowl and stir in the almond flour. Mix it all together till smooth.

  • Add the toasted cashews and mix.

  • Place the bowl in the freezer for at least an hour.

Once the hour has passed, they’re ready to be served. Time to enjoy these delicious vegan chocolate bars!

Tips on how to melt the chocolate:

The easiest way is the microwave. Place the chocolate in a bowl and heat at medium power for 1 minute and then in intervals of 30 seconds. Every time you take it our, stir the chocolate and put it back in the microwave. Another option is over a bain marie. To melt chocolate in a bain marie, you only need a pot and a heatproof bowl. Cover the bottom of a pot with water, but not more than half its capacity, and place the bowl on top. It is important that this bowl does not touch the bottom of the pot. Then, heat it over low power so that the water takes temperature gradually. Stir the chocolate till its completely melted.

Please note that although these chocolate bars are healthier than the conventional options, they still have a high amount of calories. I consider 1 bar as a serving.
