Vegan chocolate banana bites

These vegan chocolate bites are the perfect snack or dessert for when you’re craving something sweet. They’re healthy, low sugar, gluten-free and flavorsome. The best part? They’re so easy to make. It doesn’t take more than 10 minutes to prepare them. The only hard part of this recipe is waiting for the chocolate to harden.

These vegan bites are the ultimate vegan dessert. I love having them while I drink my coffee. Although, I must confess that they don’t last longer than a day in my fridge. They’re so delicious! The combination of peanut butter, banana and chocolate is a flavor explosion. They can easily be stored in the fridge and consumed whenever you want.

Before we get into the preparation steps, I’d like to give you some previous tips that will help you get out the most of this recipe.

  • Use a ripe banana. I’d personally choose a ripe banana for this recipe, although it shouldn’t be too ripe and soft. Pick one that has a darker yellow color and is starting to show little black spots.
  • There are two easy ways of melting the chocolate: in the microwave or over a bain marie. Either of the two options will make sure you don’t burn it. Don’t make up any strange method to melt the chocolate, it will probably get burnt (believe me, I’ve been there). At the end of the post I’ll leave you some more tips on how exactly you could do it.

Great! Now let’s get into the next step: the ingredients of this recipe:

  • Ingredients (10 pieces):
  • 2 bananas
  • 2 tbsp of peanut butter
  • 100 gr of dark chocolate 85% cocoa
  • 2 tsp of coconut oil

Topping:

  • 15 almonds

Instructions:

  1. Slice the bananas.
  2. Grab the peanut butter and with a small knife place peanut butter on top of a slice and cover with another slice (like you’re making an oreo but without the oreos :D)
  3. Repeat with the rest of the banana slices.
  4. In a heatproof bowl, melt the chocolate with the coconut oil.
  5. Grab each peanut butter banana “sandwich” and dip them one by one into the melted chocolate.
  6. Chop the almonds into small chunks and spread them on top of the chocolate banana bites.
  7. Place them in the fridge for at least 2 or 3 hours. A tip to speed up the process is placing them in the freezer for 30 minutes and they would be ready to eat.
  8. Enjoy!

Now, let me give you just a few other tips on how to melt the chocolate:

The easiest way is the microwave. Place the chocolate in a bowl and heat at medium power for 1 minute and then in intervals of 30 seconds. Every time you take it our, stir the chocolate and put it back in the microwave. Another option is over a bain marie. To melt chocolate in a bain marie, you only need a pot and a heatproof bowl. Cover the bottom of a pot with water and place the bowl on top of it. It’s important that the bowl doesn’t touch the bottom of the pot. Then, heat it over low power so that the water takes temperature gradually. Stir the chocolate till its completely melted.
