Peanut butter chocolate cups

These peanut butter chocolate cups taste like heaven on earth. Their sweetness and delicious flavour will make you wonder if they’re actually healthy, and the answer is yes, these chocolate cups are low-carb, low sugar and gluten-free. The sweetener of choice is honey, but for a vegan version you can use maple syrup.

This recipe is the result of my chocolate cravings turned into a flavoursome dessert. It’s perfect to have it with your coffee or just as an afternoon snack. For this recipe you only need 5 ingredients and following a few simple steps. The only tough part is waiting for the chocolate to harden, but believe me, it’s totally worth it.

As a lifelong chocolate lover, these chocolate cups make me really happy. They taste so good that you’ll find it hard to not eat all of them at once. They’re easy and quick to make, and they’ll be loved even by the healthy desserts sceptics.

If you want a totally sugar-free version, use sugar-free dark chocolate and substitute the honey with coconut oil and the sweetener of your choice. I personally prefer to use the normal dark chocolate with 85% cocoa, as artificial sweeteners used in the sugar-free versions can alter your gut microbiota. The chocolate that I use only has 12 grams of sugar per each 100 grams of chocolate, which means that every chocolate cup has only 1 gram of added sugar.

How to make these peanut butter chocolate cups

Ingredients (12 servings):

  • 100 gr of dark chocolate
  • 1 tbsp of coconut oil
  • 1/4 + 1/2 cup of almond flour or ground almonds
  • 1/3 cup of peanut or almond butter
  • 3 tbsp of honey

Instructions:

  • Melt the chocolate with the tbsp of coconut oil in the microwave or over a Bain Marie (instructions at the end of the recipe)

  • Stir the melted chocolate into the moulds and place them in the fridge for at least 30 minutes

  • In the meantime, mix the honey and the almond flour till you get a non-sticky dough

  • Take 1/2 tsp portions and place them in the moulds

  • Stir 1/2 tsp portions of peanut butter on top

  • Cover them with the rest of melted chocolate

  • Place it in the fridge for at least 30 minutes
  • Done! Enjoy these healthy peanut butter chocolate cups!

Notes:

  • You don’t have almond flour? No problemo! You can use normal almonds and grind them in a food processor or a coffee grinder.
  • How to melt the chocolate: The easiest way is the microwave. Place the chocolate in a bowl and heat at medium power for 1 minute and then in intervals of 30 seconds. Every time you take it out, stir the chocolate and put it back in the microwave. Another option is over a Bain Marie. To melt chocolate in a Bain Marie, you only need a pot and a heatproof bowl. Cover the bottom of a pot with water, but not more than half its capacity, and place the bowl on top. It is important that this bowl does not touch the bottom of the pot. Then, heat it over low power so that the water takes temperature gradually. Stir the chocolate till it’s completely melted.
  • I strongly recommend you to use a silicon mould, it’s way easier to get them out once the chocolate has hardened.
  • You don’t have these moulds? Use your usual cupcake moulds instead.

Please note that although these chocolate bars are healthier than the conventional options, they still have a high amount of calories. I consider 1 or 2 bars as a serving.
