Homemade sweet potato gnocchis with a creamy vegan sauce

These homemade sweet potato gnocchis are the ultimate comfort food. They’re gluten-free, easy to make and incredibly delicious. Served with a creamy sauce made with spinach and cherry tomatoes, this recipe gives you a vegan balanced meal that has nothing to envy to the regular white flour gnocchis.

I lived in Italy for almost a year back in 2018. As a lifelong carb lover I found my happy place, I learned how to make delicious gnocchis and zucchini quiche from my italian flatmate (who is a strong advocate of his Nonna’s recipes) but that’s for another post. I also gained 7 kg of happiness but that’s for another post as well.

After all those lovely months of making unhealthy life choices, I decided to give it a twist and create a healthier version of gnocchis. These homemade gnocchis are made with sweet potato, oat flour and olive oil. Sweet potatoes are a great source of fiber and vitamin A, in addition to giving a slightly sweet flavor to this recipe, while the oat flour is one of the healthiest grains and the number 1 choice of most nutritionists.

What goes with sweet potato gnocchi? As the pasta itself already has its flavor, I would go for a simple sauce. Spinach is a great idea, and the cherry tomatoes give this recipe a delicious touch of acidity, which brings up even more the other flavors. The oat cream I use is the “Oatly organic creamy oat” which you can easily find in many supermarkets.

So without further ado, let’s jump right into this homemade gnocchis recipe:

Ingredients (2 servings)

  • 1, 1/2 cups of oat flour
  • 1/2 of a medium sized sweet potato (or 1 cup of sweet potato puree)
  • 1 tbsp of olive oil

Sauce:

  • 250 ml of oat cream
  • 200 gr of spinach
  • 250 gr of cherry tomatoes
  • 1 garlic clove
  • Spices: salt and pepper, paprika, oregano

Instructions: how to make sweet potato gnocchis

  • Bring a pot of salted water to a boil.
  • Slice the sweet potato and add it to the boiling water. Cook for 20 to 25 minutes or until tender.
  • Once cooked, strain the sweet potato slices and place them in a bowl.
  • Mash them till you get a smooth texture.
  • Sift the flour (do it, don’t be lazy, I’m watching you) and add it to the mashed sweet potatoes.
  • Add the olive oil.
  • Knead till you get a non-sticky dough. If it’s still sticky, add some more flour and keep mixing.
  • Cut the dough in 4 equal pieces.
  • On a clean floured surface, shape the pieces of the dough into long “ropes” by rolling it with your hands. Cut them into 2-3 cm pieces. Then slide each piece on a fork and slighlty press them.
How to make homemade sweet potato gnocchis
  • Place them on a plate and set them aside. It’s time to make the sauce.
  • Preheat a pan over medium heat. Add a teaspoon of olive oil.
  • Chop the garlic and add it to the pan, cook for 2 or 3 minutes.
  • Cut the cherry tomatoes in half and add them to the pan. Cook for about 10 minutes.
  • Add the spinach, salt, pepper, oregano and paprika and cook for another 4 or 5 minutes.
  • Add the oat cream and cook for another 3 minutes (while you cook the gnocchis)
  • After you added the oat cream to the pan, bring a pot of salted water to a boil and add the gnocchis. Cook for 2 or 3 minutes (they’re done when they come to the surface).
  • Add them to the sauce. Mix it all together.
  • Done! Time to enjoy this delicious homemade sweet potato gnocchis recipe.
