Coconut oatmeal porridge

This coconut oatmeal porridge will remind you of the traditional rice pudding but without the sugar and dairy milk that comes with it. This recipe is vegan, sugar-free and incredibly delicious, a breakfast that can easily be prepared in less than 15 minutes. It’s a nutritious and balanced meal with a mild coconut and cinnamon flavour, combined with a creamy texture.

Who said that cooking your breakfast takes a lot of time? This creamy oatmeal porridge has it all, the texture, the flavour, easy to combine with any topping of your preference and great nutritional values. And the best of all? In less than 15 minutes, you’ll get a perfectly healthy breakfast that will keep you full throughout the whole morning. Oatmeal is a great source of fibre and antioxidants that promotes healthy bacteria in your digestive system, a side of being gluten-free.

In this case I used walnuts, blueberries and kiwi as a topping but you can also use chia seeds, hemp seeds, peanut butter, banana, or whatever ingredient you prefer. The best thing of this recipe is that besides being one of the cheapest healthy breakfasts, is also versatile, you can combine it with a variety of ingredients.

How to make this creamy coconut porridge

Coconut oatmeal porridge - Recipe

Ingredients:

Coconut oatmeal porridge - Ingredients
  • ½ cup of rolled oats
  • 1/3 cup of coconut milk
  • ½ + ¼ cup of water
  • 1 tbsp of shredded coconut
  • 1/2 tbsp of cinnamon
  • 1 tbsp of flax seeds (optional)
  • 1 tbsp of honey (optional)

Toppings:

  • 1 tbsp of shredded coconut or coconut chips
  • 1 kiwi
  • Blueberries
  • Walnuts

Instructions:

  • Mix the oats, coconut milk, water, cinnamon, honey and 1 tbsp of shredded coconut in a pot.
  • Cook over medium heat for 6-8 min till the oats have absorbed the liquid covering with a lid. Stir every 2 or 3 min.
  • Place it in a bowl and decorate with toppings.
  • Done! Enjoy this easy vegan breakfast.
