These cookies are the perfect Sunday snack. The toasted coconut flavor combined with the crunchy yet chewy texture makes them irresistible even to the healthy dessert skeptics. This is a fun and delicious recipe to make with your kids, they will love it!

How to make chocolate coconut cookies

This recipe is all about coconut (in case you didn’t notice yet). You’re gonna need coconut flour, coconut milk, coconut oil and shredded coconut. The coconut is naturally sweet, so you don’t need to add extra sugar, only a little bit of stevia powder for those who (like me) likes some extra sweetness.

Ingredients (9 or 10 cookies)

  • 2 eggs
  • 1/2 cup of oat flour
  • 1/2 cup of coconut flour
  • 1/3 cup of shredded coconut
  • 1/4 cup of coconut oil
  • Stevia powder

Topping:

  • 25 gr of dark chocolate 85% cocoa
  • 3 tbsp of coconut milk
  • 1 tsp of shredded coconut

Instructions:

  1. Pre-heat the oven at maximum temperature.
  2. Place the eggs in a bowl and mix them with a whisk.
  3. Add the coconut oil and mix again.
  4. Sift the coconut and oat flour and add them to the bowl with the shredded coconut and stevia powder. Mix until you get a non sticky dough.
  5. Take 2 tbsp portions from the dough and form little cookie discs, place them on a baking sheet.
  6. Place them in the oven and bake them for 12-15 minutes at 180ºC (356ºF)
  7. Take them out of the oven and let them cool down.
  8. Once they have cooled, place the chocolate and the coconut milk in a heatroof bowl and melt the chocolate (instructions at the end of the recipe).
  9. Take each cookie and dip it into the melted chocolate on one side. Spread some more shredded coconut on top.
  10. Place the cookies in the fridge to expedite the hardening process.
  11. Done. Enjoy!

Tips on how to melt the chocolate: The easiest way is the microwave. Place the chocolate in a bowl and heat at medium power for 1 minute and then in intervals of 30 seconds. Every time you take it our, stir the chocolate and put it back in the microwave. Another option is over a bain marie. To melt chocolate in a bain marie, you only need a pot and a heatproof bowl. Cover the bottom of a pot with water, but not more than half its capacity, and place the bowl on top. It is important that this bowl does not touch the bottom of the pot. Then, heat it over low power so that the water takes temperature gradually. Stir the chocolate till its completely melted.
